Pinot Noir, Velvet Sister

Relish a ripe Velvet Sister on crostini by adding a little topper like Bacon and Caramelized Onion Jam. A simple but savory recipe that makes an easy appetizer. 


• 2 c Bacon, cooked and diced
• 4 c Red Onion, diced
¼ c Brown Sugar
• ¼ Pinot Noir
¼ c Balsamic Vinegar
 1 Velvet Sister
 1 Baguette, sliced and griddled

Serves 8

  1. After rendering 2 cups of diced bacon, reserve a teaspoon of fat to cook 4 cups of diced red onion
  2. Sauté onions until just about caramelized then add brown sugar, Pinot Noir, and Balsamic Vinegar and simmer until liquid reduces.
  3. Finally stir in the bacon to finish your jam. Let cool before topping onto the sliced Velvet Sister and crostini. 
  4. Optional Topping: Micro-greens and edible flowers like bachelor buttons and/or chive blossoms.
