Relish a ripe Velvet Sister on crostini by adding a little topper like Bacon and Caramelized Onion Jam. A simple but savory recipe that makes an easy appetizer.
2021 Pinot Noir, Anderson Valley
- After rendering 2 cups of diced bacon, reserve a teaspoon of fat to cook 4 cups of diced red onion
- Sauté onions until just about caramelized then add brown sugar, Pinot Noir, and Balsamic Vinegar and simmer until liquid reduces.
- Finally stir in the bacon to finish your jam. Let cool before topping onto the sliced Velvet Sister and crostini.
- Optional Topping: Micro-greens and edible flowers like bachelor buttons and/or chive blossoms.
