Bollie's Mollies is named for the creek that runs through Pennyroyal Farm, nicknamed Bolly Creek because, as rumor has it, an early settler on the stream was bald. The Mollies half of the name comes from a Boontling word for the part of the female anatomy most closely associated with milk! Bollie's Mollies is a surface-ripened cheese that develops a fine layer of blue-grey mold as it ages over a three- to four-week period, lending complexity to the tang of the young cheese.
