Despite its easy-drinking style, crafting a compelling rosé remains an annual challenge for winemaker Sarah. The process begins in the Monty In Vineyard, where she selects early-season fruit harvested at around 23 Brix, to preserve freshness and acidity. At the crush pad, she carefully manages color and texture, with less than one hour of skin contact for this vintage. Delicate pale pink in color, this Rosé opens with aromas of strawberry parfait, red raspberry, and cassis. The palate is bright and acid-driven, with a lively bite, low alcohol, and ripeness achieved without heat influence. The result is a vibrant, refreshing rosé defined by precision, energy, and lift.
