2018 Blanc de Noir, Anderson Valley
As a dairy, our estate seems to invite birds to forage among the pastures and adjacent vineyards. During our first harvests, we noticed that birds tended to target only the outer edges of the vineyard. By picking the first ten vines along the perimeter early for sparkling production, we deter birds from returning while protecting the interior grapes that need a few more weeks to fully ripen. You could say our sparkling wine is a fine result of preventive measures! Fresh-baked panettone leads on the nose, layered with Rainier cherry, dried currant, and candied orange. On the palate, a fine, persistent mousse carries vibrant acidity and a supple, balanced texture. Bright yet generous, this Blanc de Noir pairs beautifully with the sweet, fresh character of our Boont Corners Two Month tomme.
