2023 Chardonnay, Hammer Olsen Vineyard, Anderson Valley
Crafting our barrel-fermented Chardonnay is a meticulous journey. The juice is transferred immediately to the barrel after pressing, with each harvest producing an average of 20 barrels per lot. We carefully monitor each barrel as they are individually unique, anticipating the natural yeast activity that transforms the green apple characters into richer aromas and infuses the wine's maple-like notes from the wood. Malolactic fermentation adds caramel-dipped flavors to the wine's complexity and velvety mouthfeel. This process ensures our Chardonnay’s exceptional quality and depth are preserved. Once the lees are removed, the wine has just the right amount of oak influence, resulting in a beautifully balanced taste reminiscent of freshly baked lemon bar topped with toasted almonds. We enjoy tasting how the wine’s citrusy characteristics are well-paired with its cheese equivalent, Bollie’s Mollies -- both tangy and long-lasting.
