Being a dairy, our property encourages more birds to come through and forage in the pastures and adjacent vineyards. In our first harvests, we noticed only the outer edges of the vineyard being targeted. Picking the first ten vines along the perimeter early for sparkling production helps to deter birds from returning and thus, avoiding the interior grapes that need a few more weeks of ripening before harvest. You can say that our sparkling wine is a fine result of preventive measures! Produced via the traditional method, this 100% Pinot Noir sparkler has crisp acidity, rich apple meringue flavors, and fresh-baked graham cracker aromas. This bright but balanced Blanc de Noir pairs well with the sweet, fresh nature of our Boont Corners Two Month tomme.
