Winemaker Sarah noted that the 2025 growing season was cooler than average, with a moderate summer and harvest dates about one week later than usual. The extended hang time produced a large crop of beautifully developed fruit, marked by vibrant acidity and naturally lower alcohol. After careful picking and pressing, the wine was fermented in ovals and aged sur lie to enhance texture and complexity, while cold fermentation preserved its floral aromatics. On the nose, this Sauvignon Blanc opens with crisp, almost effervescent jasmine notes layered over fresh green grass, with hints of mango and pineapple. The palate is bright and lively, with refreshing acidity and a clean finish. The result is a beautifully expressive wine that is fresh and perfectly suited for the season.
