2018 Brut Rosé, Anderson Valley

The 2018 Brut Rosé is a 100% Pinot Noir sparkler that Sarah decided to enhance what would have been a traditional Blanc de Noir just ever so slightly with a 2% addition of red wine, making it “blush.” It also adds more length and balance to the base wine’s acid. The resulting barely-pink, fine bubbles emit notes of plum flowers and create a rich mouthful that reminds us of tart apples with toasted hazelnuts in the fall. A tasty cheese pairing for this sparkler is the Reserve, the oldest of our Boont Corners tommes. We can’t help but love the “twinning” of how the Reserve becomes a more “pink” hue as it ages, just like this Brut Rosé.
