Our second harvest for sparkling wine was marked by the eerie yet beautiful occurrence of 2017’s total solar eclipse. While the sun became slowly darkened by the moon, our first picks of Pinot Noir were selected and whole-cluster pressed. Produced via the traditional method, this 100% Pinot Noir sparkler has high acidity, rich yet crisp flavors of apple meringue, and aromas of fresh-baked graham cracker. We have a hunch that the day’s rays of electromagnetic radiation have only benefited the wine’s effervescence and brilliant golden color so that each sip will eclipse the last.
