A limited version of our most beloved cheese made from 100% sheep milk! Laychee is the Boontling term for milk and it is a fresh cheese that undergoes two days of acidification, but no ripening. This is milk which is transformed into cheese in just a matter of days, so is the first available cheese of each new spring.
